Unlike many curries, an authentic Karahi relies on a high-heat stir-fry technique and the absence of onions to create a concentrated, "jammy" tomato base. Because the ingredient list is minimal, the depth of flavor depends entirely on the quality of your poultry.

Preparation Instructions 1. Sizzle the Aromatics In a traditional wok or heavy-bottomed pan, heat your ghee over medium-high heat. Add the garlic and ginger, sautéing for just a minute until the aroma fills your kitchen. 2. Sear the Tayyib Chicken Add the chicken pieces to the pan. Fry on high heat until the meat changes color and develops a slight golden-brown crust. This sears in the natural juices. 3. The "Blistering" Tomato Stage Stir in the chopped tomatoes and cover the pan. Let them simmer for 10–15 minutes until they soften completely. This traditional method of blistering the tomatoes is the secret to a thick, velvety masala without needing onions. 4. The "Bhunnu" (The Reduction) Uncover and stir in the salt, chili powder, turmeric, cumin, and coriander. Now comes the most important step: cook uncovered, stirring frequently, until the moisture evaporates and the oil begins to separate from the masala (the bhunnu stage). 5. Infuse & Temper Toss in the green chilies and the dried fenugreek leaves. The Kasuri Methi will provide that unmistakable "restaurant-style" fragrance. 6. The Final Sizzle Finish by folding in the garam masala and black pepper. Stir well for another 2–3 minutes on high heat to achieve that signature wok-seared flavor. 7. Presentation Remove from heat and garnish heavily with fresh cilantro and julienned ginger. The heat from the chicken will slightly soften the ginger, releasing its sharp, fresh oils.
