Beef Kofta

​Beef kofta is a delicious, flavorful dish that’s commonly made with minced beef (or lamb) and a blend of spices, then shaped into meatballs or patties and grilled or cooked in a sauce. It's popular in many Middle Eastern and North African cuisines, including Moroccan cuisine.
How to Prepare Delicious Beef Kofta at Home
Ingredients:
  • 1 lb (450g) of our 80% lean grass-fed & finished ground beef
  • 1 small onion, finely chopped or grated
  • 2-3 garlic cloves, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped (optional)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground paprika or smoked paprika
  • 1/4 tsp ground allspice (optional)
  • Salt and pepper, to taste
  • 1-2 tbsp olive oil (for cooking)
All ingredients are organic or at least GMOs free. 

Instructions:
  1. Prepare the kofta mixture:
    • In a large bowl, combine the ground beef, chopped onion, garlic, parsley, cilantro, and all the spices (cumin, coriander, cinnamon, paprika, allspice, salt, and pepper).
    • Use your hands or a spoon to mix everything together thoroughly until well combined. This ensures the spices are evenly distributed throughout the meat.
  2. Shape the kofta:
    • With your hands, take small portions of the beef mixture and shape them into oval or cylindrical patties (about 1 to 1.5 inches thick). You can make them larger or smaller depending on your preference.
    • For a more traditional shape, you can form the mixture around skewers, creating long kebab-style koftas. If you don’t have skewers, just shape the meat into small logs or meatballs.
  3. Cook the kofta:
    • Grilling: Preheat your grill to medium-high heat. Brush the grill with a little olive oil to prevent sticking. Grill the kofta for about 4-6 minutes on each side (depending on size), turning them until they're browned and cooked through.
    • Stovetop: Heat 1-2 tablespoons of olive oil in a large skillet over medium heat. Cook the koftas in batches, turning them every few minutes to brown on all sides. They should take about 8-10 minutes to cook through, depending on their size.
    • Baking: You can also bake the koftas in a preheated oven at 375°F (190°C) for 20-25 minutes, flipping halfway through to ensure even cooking.
  4. Serve:
    • Once cooked, remove the kofta from the heat. You can serve them as-is with a side of rice, couscous, or flatbread, or serve them with a fresh salad or yogurt sauce (like tzatziki or a tahini sauce).
Tips:
  • To make sure the koftas stay juicy and tender, don’t overwork the meat when mixing, and ensure the meat mixture is well-seasoned.
  • If grilling or using skewers, be careful when turning the kofta to prevent it from breaking apart.
  • You can also serve the kofta with a rich tomato-based sauce or a tangy yogurt sauce for extra flavor.
