Spicy Fried Chicken Recipe: Crispy, Flavorful, and Packed with Heat

Here's a tasty recipe for spicy fried chicken:

Ingredients:
  • Chicken:
    • 4-6 bone-in, skin-on Halal-N-Tayyib chicken thighs or drumsticks
    • 1 cup buttermilk (for marinating)
    • 1 tbsp hot sauce (optional for extra spice)
    • Salt and pepper (to taste)
 
  • Seasoned Flour:
    • 1 ½ cups all-purpose flour
    • 1 tsp paprika
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp cayenne pepper (adjust based on desired heat level)
    • 1 tsp ground black pepper
    • 1 tsp salt
    • ½ tsp dried thyme or oregano (optional)
 
  • For Frying:
    • Vegetable oil (for frying), we prefer using beef tallow. 
 
  • Spicy Glaze (optional but recommended):
    • 3 tbsp hot sauce (your favorite brand)
    • 2 tbsp honey or brown sugar
    • 1 tbsp butter
    • ½ tsp chili flakes (optional)

Instructions:
  1. Marinate the Chicken:
    • In a bowl, combine the buttermilk, hot sauce (if using), salt, and pepper.
    • Add the chicken pieces and mix to coat evenly. Cover and refrigerate for at least 1 hour (overnight is ideal for maximum flavor).
  2. Prepare the Seasoned Flour:
    • In a large bowl, whisk together the flour, paprika, garlic powder, onion powder, cayenne, black pepper, salt, and thyme.
  3. Coat the Chicken:
    • Take each piece of chicken out of the buttermilk and shake off any excess.
    • Dredge the chicken in the seasoned flour, pressing gently to ensure an even coating. Set aside on a wire rack or plate.
  4. Heat the Oil:
    • Pour enough vegetable oil into a large skillet or deep fryer to cover the chicken (about 2 inches deep). Heat the oil to 350°F (175°C). You can test the oil by dropping a small piece of bread or flour in it — it should sizzle immediately.
  5. Fry the Chicken:
    • Fry the chicken in batches to avoid overcrowding, about 8-10 minutes per batch, turning occasionally until golden brown and cooked through. The internal temperature should reach 165°F (75°C).
    • Remove the chicken and place it on a paper towel-lined plate to drain excess oil.
  6. Make the Spicy Glaze:
    • While the chicken is frying, combine the hot sauce, honey (or brown sugar), butter, and chili flakes in a small saucepan over low heat. Stir until the butter is melted and the mixture is smooth and slightly thickened.
  7. Glaze the Chicken:
    • Once the chicken is fried and drained, brush the spicy glaze over the top of each piece, or toss the chicken in a large bowl with the glaze for a more even coating.
  8. Serve:
    • Serve hot with your favorite side dishes like mashed potatoes, coleslaw, or cornbread. Enjoy your spicy fried chicken!
