Beef Oxtail Stew is a hearty, flavorful dish that’s perfect for a cozy, comforting meal. Known for its rich taste and tender, melt-in-your-mouth meat, oxtail is slow-cooked in a savory broth with vegetables, aromatic spices, and a touch of red wine for depth. This dish is the perfect combination of savory, earthy flavors, making it an ideal choice for family dinners, special occasions, or a cold evening when you crave something warm and filling. Whether served with rice, mashed potatoes, or crusty bread, this Beef Oxtail Stew will surely satisfy your taste buds and leave you coming back for more.

Here's a delicious recipe for Beef Oxtail that results in a rich, flavorful dish with tender, melt-in-your-mouth meat. The oxtail is slow-cooked in a savory broth with aromatic vegetables and spices, creating a hearty stew.

Ingredients:
  • Halal-N-Tayyib Beef Oxtail: 2-3 lbs (cut into sections)
  • Olive Oil: 2 tablespoons (for browning)
  • Onion: 1 large, chopped
  • Carrots: 2, peeled and chopped
  • Celery: 2 stalks, chopped
  • Garlic: 4 cloves, minced
  • Tomato Paste: 2 tablespoons
  • Crushed Tomatoes: 1 can (14 oz)
  • Beef Broth: 4 cups (or water with beef bouillon cubes)
  • Red Wine: 1 cup (optional but adds depth of flavor)
  • Bay Leaves: 2
  • Fresh Thyme: 3-4 sprigs (or 1 teaspoon dried thyme)
  • Allspice: 1/2 teaspoon (optional)
  • Salt: to taste
  • Black Pepper: to taste
  • Paprika: 1 teaspoon
  • Cayenne Pepper: 1/4 teaspoon (optional for heat)
  • Ginger: 1-inch piece, grated (optional, for added warmth)
  • Fresh Parsley: chopped, for garnish
  • Lemon: for squeezing over the dish (optional)

Instructions:
Step 1: Brown the Oxtail
  1. Heat olive oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.
  2. Add the oxtail pieces in batches, browning them on all sides for about 5-7 minutes. Remove and set aside.
  3. Once all the oxtail pieces are browned, set them aside and lower the heat to medium.
Step 2: Sauté Vegetables
  1. In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.
  2. Add the garlic and cook for another 1-2 minutes until fragrant.
  3. Stir in the tomato paste, and cook for an additional 2 minutes, allowing the paste to caramelize slightly.
Step 3: Add Liquids and Seasonings
  1. Add the crushed tomatoes, beef broth, and red wine (if using). Stir well to combine.
  2. Add the bay leaves, thyme, allspice, paprika, cayenne pepper, and grated ginger (if using).
  3. Season with salt and black pepper to taste.
  4. Return the browned oxtail pieces to the pot and make sure they’re fully submerged in the liquid.
Step 4: Simmer the Oxtail
  1. Bring the mixture to a boil, then reduce the heat to low.
  2. Cover the pot and let the oxtail simmer for 2.5 to 3 hours, or until the meat is tender and falling off the bone. Check periodically, adding more broth or water if necessary to keep the oxtail submerged.
Step 5: Finish and Serve
  1. Once the oxtail is tender, remove the bay leaves and thyme sprigs (if using fresh).
  2. Taste the stew and adjust the seasoning, adding more salt, pepper, or cayenne if desired.
  3. Garnish with freshly chopped parsley.
  4. Serve the oxtail stew hot, with steamed rice, mashed potatoes, or crusty bread to soak up the delicious sauce.

Tips:
  • Slow Cooker Version: You can also make this recipe in a slow cooker. After browning the oxtail, add everything to the slow cooker, and cook on low for 7-8 hours or until the meat is tender.
  • Pressure Cooker: If you want to speed up the process, you can cook the oxtail in a pressure cooker for about 45-60 minutes, depending on the size of the oxtail pieces.
  • Leftovers: This stew tastes even better the next day as the flavors continue to develop.

Serving Suggestions:
  • Serve with steamed white rice, mashed potatoes, or buttered cornbread.
  • Green vegetables, such as sautéed spinach or steamed broccoli, make a great side to balance the richness of the dish.
